Sugar, Sugar

Raw Coconut&Persimmon Parfait by Swell
We all eat it. We all love it. We know moderation is important blah blah blah.

But WHY is sugar moderation so so so important?
> Sugar raises the insulin level, which inhibits the release of growth hormones, which in turn depresses the immune system.
> Insulin also promotes the storage of fat, so when you eat sweets high in sugar, you're making way for rapid weight gain and elevated triglyceride levels, both of which have been linked to cardiovascular disease.
> The lower the GI of the food, the slower the absorption and digestion process, which provides a more gradual, healthier infusion of sugars into the bloodstream.
> Sugar can upset body's mineral balance.

My Advice: SHARE (besides it's more fun when you share anyways)
I love raw desserts, because they're chilled and fluffy and oh so decadent. Cacao is super-rich/ideal for sharing a spoonful or two ;) Our regular desserts are good ol' fresh fruit, such as pineapple, peaches, strawberries or pears, but on occasion, we indulge on exceptional goodness as you will get a hint of below.
